We would like to have BIG minus in order to distuinguish between -2 and 123 - 45

LaTeX supports the double and triple -, but GeoGebra formats the output differently.

Is there a way to obtain real minus signs?

Try the Unicode minus sign:

Just have to say that -- and --- are not math symbols in LaTeX. These are dashes and should be used in text. In math mode there is just one type of minus. LaTeX decides whether it's unary or binary and adds proper spacing to distinguish these variants. You can add spaces manually in GeoGebra via \, \! etc.
