Right click on the segment, then select Object properties.. (v.5) or Settings (v.6 - apps) in the appearing context menu.
The properties panel of the object appears. Select the Style tab, and use the Decoration options in that tab.
If your version of Ggb displays the Style bar of the object when selecting it, you can also use the rightmost icon of the Style bar (three dots) to access the Settings panel of the segment.

What worked for me (in the free version) is to right click on the object and then pick Settings, and then the Style tab.
I knew that it had to be here somewhere
